 TAILGATE CATERERS LOVES TO DO BAR-B-QUE! OUR WHOLE HOGS ARE PURCHASED FROM LOCAL PACKAGING PLANTS AND ARE QUITE OFTEN ONLY HOURS DECEASED. THEY ARE USDA INSPECTED AND STAMPED RIGHT AT THE PACKAGING PLANT, THUS YOU CANNOT GET ANY SAFER OR FRESHER PORK!

 WE SMOKE OUR MEATS IN A FULL CUSTOM CONVECTION SMOKER USING LOGS AND LUMP CHARCOAL. THIS PROCESS ALLOWS US TO FINISH UP TO THREE WHOLE HOGS TO COMPLETION PERFECTION IN UNDER EIGHT HOURS. PERFECT MAHOGANY COLOR FRONT TO BACK, NO HOT SPOTS AND NO UNDERCOOKED MEAT. THE SMOKER DOES NOT HAVE A SPIT ROD TO SPIN THE HOG NOR DOES IT HAVE A WINDOW TO WATCH, SO WE BRING THE FULLY COOKED HOG (OR HOGS) TO YOUR EVENT BEFORE YOUR GUESTS ARRIVE AND PUT IT ON DISPLAY DECORATED ACCORDINGLY (LUAU, WESTERN, SEASONAL VEGETABLES AND LETTUCES, WE’VE EVEN TURN ONE INTO A REINDEER FOR THE HOLIDAYS). CHEF MIKE CARVES THE HOG (DOESN’T TAKE MUCH AS THE MEAT FALLS RIGHT OFF THE BONES) AND PUTS THE CARVED MEAT WITH OUR OWN SAUCE AT THE BUFFET NEXT TO THE CHEF INSPIRED HOMEMADE SIDE DISHES.
